Easter Sunday falls on 27th March this year, and what better way to treat your family to a leisurely eggy breakfast or brunch that’s just a little bit different? See below for a simple but effective and totally delicious recipe that everyone can make.
Eggs are traditionally associated with Easter. In Christian terms, they’re are a symbol of new life, of Jesus Christ’s resurrection, with the cracked shell representing the empty tomb. But you don’t have to be religious to enjoy an egg for breakfast or, in fact, at any time of day.
Eggs are a truly versatile food – not only are they the most nutritionally complete food on the planet, you can have them boiled, poached, fried or scrambled, or try baking them as we’ve done in our recipe here. You can even microwave them! Whatever kitchen appliances you have available, there is a way to create yummy egg dishes for all occasions.
You will need: 12 eggs, 12 slices bacon, ½ tsp salt, ½ tsp pepper
Fry the bacon slices until soft and transparent but not crispy, then drain on a paper towel. Line a 12 cup muffin tray with the bacon slices, then break an egg into the middle of each cup. Season with salt and pepper and bake in a preheated oven (190C) for 20 minutes until the egg white has set. Use a spatula to carefully remove each egg & bacon cup from the muffin tray and serve with fresh toast and hot coffee!
