As Halloween is just around the corner, we’ve got two weeks of fantastic pumpkin-related blogs for you to enjoy. Pumpkins are one of the most commonly used ingredients during Halloween, even if you’re only carving one for the doorstep. So how about a way of making good use of all that leftover pumpkin, and most of them are so easy!
Something for the adults! All you need for this is pumpkin pie spice (yes like in the latte), sugar, vodka, half and half, pumpkin puree, maple syrup and a teensy bit of vanilla extract. This fantastic cocktail is smooth and creamy and perfect for Halloween.
Pumpkin Pie Pop Tarts
Buy some ready to roll puff pastry and this recipe is even easier than first thought. Mix together some pumpkin puree, sugar, cinnamon and a pinch of salt. Spread it thinly or thickly; however you like, onto the pastry and fold it over, crimping the edges to make sure the inner goodness doesn’t spill out. A dash of icing sugar or icing powder finishes off your pop tarts excellently.
A quick way to cheat a little extra pumpkin into your breakfast. Mix a few tablespoons of pureed pumpkin into your porridge while you heat it up (any porridge will do). Adding a dash of cinnamon and sugar helps to sweeten the deal.
