Part two of our fantastic pumpkin recipe pack is here. This time we are looking at great ways to create full dishes with pumpkins. As the autumn sets in, the weather often takes a turn for the worse, so to keep warm we’ve had a look at some of the more toasty recipes for you to try out.
Replacing your canned tomatoes with canned pumpkins in any lasagne recipe will get you a cheesy, creamy pumpkin pasta dish with a twist! Lasagne is one of the most popular pasta dishes coming across from Italy, so why not take the opportunity to try something a little different this Halloween.
You’ll need a few things for this recipe, although it is very easy to make; 1 tbsp olive oil, 2 sliced leeks, 2 sliced celery stalks, 1 chopped garlic glove, 1 medium pumpkin or butter nut squash cut into ½ inch cubes, a can of pumpkin puree, 50fl ounces of chicken broth and salt and pepper to taste.
Heat your oil in a large saucepan over medium heat. Add your leeks, celery and garlic and leave until softened, stirring every now and then. Then add your pumpkin cubes, puree and broth. Simmer until your pumpkin is nice and tender (about 25 mins) and then stir in your salt and pepper. Ladle your mixture into a large blender and then puree until smooth. Serve as you wish!
Getting a little cheaty once more; using a pre-made stuffing mix makes a great start to this recipe. Then simply add some dried cranberries, pumpkin puree, chopped jalapeños and sage. Your taste buds will tingle at this fantastic stuffing combination, great in any cooked meat or to eat on its own!
